🍅 The Art of Illusion: Our Strawberry Tomato “Trampantojo”

In avant-garde cuisine, visual play is just as important as flavor. In our dining room, we invite you to discover one of the most surprising and beloved creations on our menu: the strawberry tomato trampantojo.

This is a farm-to-table (kilometer 0) dessert with deep local roots, meticulously designed and crafted by our head chef, Aitor Ruiz. What at first glance appears to be a ripe tomato freshly picked from the Alavese vegetable gardens is actually a delicate, refreshing sweet bite where local strawberries take center stage. Aitor carefully tends to every step of its artisanal preparation over the stoves of our farmhouse in Askoeta (Álava), achieving a flawless balance between visual surprise and the honesty of our land’s produce. It is a magical, handcrafted crowning touch that proves that, at La Era, cuisine is truly enjoyed with all five senses.
